HEALTHY RED VELVET CUPCAKES!
These are my idea of heaven. I do love a little something sweet I must admit, and even better I love it when their guilt free and healthy. Here is my take on some healthy delicious cupcakes. Inspired from food bloggers and wellness lovers (like myself), here is a super easy and super tasty recipe that’s hard to believe is good for you. A little secret if you are making these to share, don’t tell anyone whats in them until after they taste them, unless of course there like you and me and love treats made from made from things like beetroot, cacao and avocado.. So anyway enough chatting time to get your guilt free bake on.
2 large raw beetroot (grated with the skin on)
2 eggs (free range organic and pasteurized if possible)
1 teaspoon of vanilla bean extract (I love Ovio Organics)
1 teaspoon of ground cinnamon (also love Ovio Organics)
Pinch of sea salt
150 g of Almond meal (you can either buy or make your own by grinding around one and half cups of almonds)
1/4 cup of agave or honey (I must say I love Manuka honey)
1/2 cups of raisins
1 teaspoon of bicarb soda or gluten-free baking powder
3 tablespoons of cacao powder
3 tablespoons of your choice (coconut oil is my fave, olive oil, or melted butter)
Preheat your oven to 180c no fan
Combine all of the above ingredients in a large bowl and mix well with your hands. Spoon all of the ingredients into lined cupcake muffin tins, and place in the oven to bake for around 35-45 minutes, until cooked through. Remove from the oven and let cool completely.
The Icing is optional, but I must say I love making icing for my cupcakes. You can alternatively serve with berries and your fave natural yogurt instead. But for my simple icing, scoops out 2 ripe avocados, 3 tbs of cacao powder a drop of water and a some honey, blend until smooth and creamy. Once smoothed over the cupcakes i like to serve with fresh berries.
